VERO BEACH — In celebration of summer, Cobalt Restaurant and Lounge a Klimpton restaurant at the Vero Beach Hotel & Spa, has created special a three course “Florida’s Finest” tasting menu featuring the finest locally sourced produce from Crazy Heart, B & W, and Osceola Farms and seasonal seafood from the area.
The tasting menu will be available nightly for dinner from Sunday, July 24 through Sunday, July 31, for $50 per person with five percent of the sales going to the local chapter of Dress for Success. The menu choices include:
First Course:
Arugula Salad – orange segments, hearts of palm, cucumber, banyuls vinaigrette
Local Tomato Soup – olive oil, fresh herbs
Second Course:
Local Shrimp and Clams – cavatelli pasta, herb butter, preserved lemon, tomatoes
Local Snapper – creamed corn, salsa verde
Crazy Heart Farm Chicken Breast – creamy grits, asparagus, chicken jus
Third Course:
Meyer Lemon Semifredo – fresh summer berries
Orange and Chocolate Torte – house made vanilla ice cream
Signature Cocktail:
Pure Florida – Ketel One Orange, Grey Goose Citron, fresh local orange, lemon & lime juices, sparkling wine
Dress for Success is an international not-for-profit organization that assists economically-challenged women as they transition from unemployment to self-sufficiency. The process starts with the donation of one suit. DFS then follows up with ongoing support, skill-building and career development. Since its founding in 1996, Dress for Success has expanded to over 100 affiliates throughout the U.S., Canada, Mexico, the Netherlands, New Zealand, Poland, the UK, and the West Indies.
Dress for Success offers the services of the Professional Women’s Group (PWG) to clients who have entered the workforce, to help guide their progress and advancement. The idea is to give them every chance of success in their new jobs. PWG seminars provide a safe environment in which these women can develop their professional skills, learn how to network and enlist the support of other working women. Many Kimpton employees have benefited from the work of this exceptional organization.
