The other night I stood in the middle of the kitchen, staring at the lump of freezer-paper wrapped meat. What am I making for dinner?
I could do grilled turkey burgers – but we just had that. Maybe mini turkey meatloaves – but what do I do for the sides?
I’m just about to give up and suggest we go out for dinner, which we’ve been doing more frequently than we should.
Then I heard it – a voice from the hallway.
“What about breakfast?” Keith asked.
Without a second thought, I stowed the thawed ground turkey in the fridge and pulled out the turkey bacon to thaw.
Keith being more hungry than I was, got to work on defrosting the frozen bacon in the microwave.
In the meantime, I got back to work on my computer at the kitchen table, filing an unplanned article and networking a breaking story.
Before I knew it, Keith had dinner on the table – scrambled eggs with chopped onion and a sprinkle of shredded cheddar cheese, a few slices of crispy bacon, and two pieces of toast.
Who says you can’t have breakfast for dinner? Sometimes it’s just the thing when you’re scratching your head pondering the possibilities of ground turkey.
