VERO BEACH — Friends, family, and foodies packed the Abilities Resource Center Pullen Building Conference Center for the unveiling of author Judy Mullins’ first cookbook “Judy’s Cookbook.”
Mullins’ has been working on the book for a year and pondering it for about five more.
A percentage of the book’s profits will go back to ARC. She thanks Dave Cooper, of ARC, for getting her started and encouragement along the way.
The hardest part about the process was “trying to type and seeing if I could get it together,” said Mullins.
On the day of her book signing Mullins already had 58 copies pre-ordered, and she sold more during the signing.
One reason Mullins wrote the book was to show people the healthy side of eating.
“They can learn to shop for foods that are healthy,” said Mullins.
Throughout the book there are food facts and health tips. Along with the recipes there are quotes from Chef Judy and comments from dinner guests.
When asked what recipe readers should start with Mullins enthusiastically said “MEATLOAF!”
