What and Where: When island residents think about dining out at one of our top local restaurants, the big hotels seldom come to mind. But the Wave Kitchen at the Costa d’Este Resort & Spa – owned by Gloria and Emilio Estefan – has long been one of our favorites. And after 17 years, it seems better than ever.

Ambiance/Atmosphere: Classy, airy dining room with open kitchen.

Must-Try Dishes: The cevices are the best around, as is the flan.

Adult Beverages: Full bar. Very good wine selection by bottle or glass.

Reservations: Recommended.

Price: $$$-$$$$

Rating: Four stars

Overall Verdict: In addition to offering some of the owners’ favorite Cuban dishes, the Wave serves great steaks sizzling on a lava stone; fresh seafood; and unrivaled paellas. On a recent visit, I ordered paella a la Costa. This is the real deal – clams, mussels, scallops, shrimp and chorizo all cooked together with calasparra rice, which produces maximum flavor. Sensational! My husband had the pan roasted red snapper (it couldn’t have been fresher) served over yummy Lyonnaise potatoes.
