VERO BEACH — After venturing to Stuart a year and a half ago to start a successful new restaurant, Tapas Latin Fusion, Chef David Rodriguez, former executive chef at Gloria and Emilio Estefan’s Costa d’Este Hotel, is happy to return to Vero Beach for his newest culinary creation.
“It’s great to be back,” said Rodriguez, executive chef and owner of the soonto- open dining spot, Cork and Tapas, on Miracle Mile.
The unique wine, tapas, and dessert bar is located at 2101 Indian River Boulevard and will be have its grand opening on the evening of Jan. 16 from 5 to 8 p.m.
“I was looking for the perfect place in Vero and I found it here,” said Rodriguez, describing a 950-square-foot unit which he says is both elegant and welcoming.
“This location has real atmosphere,” Rodriguez said. “The setting is rich with chocolate brown wood, leather furniture, and an onyx bar lit from beneath.
“After a day of work, shopping or meetings,” he said, “our little place will be a perfect spot to stop in and join friends.”
The menu has been designed with sharing in mind. In creating the menu, Rodriguez draws on his creative cuisine and fine dining experience.
“This is not meant for heavy dining,” Rodriguez explained, “this is for light, delicious dishes and fun.”
In addition, the tapas menu offers a beautiful selection of elegant desserts featuring Rodriguez’s own creations, and those of local vendors.
“I also hope people will stop in after an evening out, and finish their night with us,” said Rodriguez.
The tapas menu draws inspiration from Rodriguez’s roots.
From nibbler dishes including goat cheese brûlee and baby arugula and bresaola Carpaccio to pressed sandwiches with Spanish chorizo, Gruyere cheese, roasted pepper and peppered roast beef, Rodriguez has not forgotten the art of lovely fresh salads and flat breads.
The 75-wine list will include some of Rodriguez’s favorite Spanish wines as well as good wines from Italy, France and the United States.
“And I have added a section which will include wines from Australia and Africa and other wine-growing regions,” said Rodriguez, “and a variety of lovely dessert wines.”
Rodriguez has included his renowned and unique selection of sangrias, including seven types and flavors which are best sellers at his Stuart restaurant.
Live music will be added to this lovely venue on many nights as the location includes an outside area which will feature musical artists who will play under starlight skies filling the air with a feeling of neighborhood friendliness and festivity.
“When people come here, they will leave feeling like they have made new friends,” promises Shannon McCarney, bartender and supporter of Rodriguez.
“A loyal following is eager to see David back and his wonderful menu and exquisite wine selection,” McCarney said.
“Our goal is to give people quality food and wine, and a wonderful experience,” Rodriguez said. “Cork and Tapas is a sophisticated place to get together and have fun.”
