EATS: Rabbit food and peanut butter cookies

I’ve been in journalism for about 10 years now, covering government meetings, community events and other news of note. So when I saw the agenda for this week’s Board of County Commissioners meeting, I knew I was going to be there for a long time.

I had hoped to make a peanut butter and jelly sandwich, pack some veggies and fruit and call it lunch. A slight timing miscalculation meant no sandwich – the bread never made it out of the freezer.

So, I packed more veggies – or as some like to tease, “rabbit food” – a handful of peanut butter cookies (a healthier version of the classic) and a couple strawberry cereal bars. Not exactly what I had planned, but close enough.

Sure enough, the commission meeting ran about as late as I had feared it would – past 5 p.m. – and the School Board meeting I also had to cover that day began at 6 p.m.

Fortunately, I had grabbed so many vegetables that my rabbit food lunch became my rabbit food dinner.

Needless to say, I’m a little veggied out. Just don’t tell the owner of the produce stand I frequent.

As tired as I am with veggies, though, it’s time to restock – they are good for you after all.

As for the peanut butter cookies, the last one has left the cookie jar. Pity. Guess that means I’ll have to whip up a batch of some other sweet treat. Yum!
