EATS: Thanksgiving leftovers – Bring on the meetings

Thanksgiving could not have come at a more opportune time. What could be better than traveling to see the family and gorging on turkey, corn casserole, sweet potato casserole and pumpkin pie?

Leftovers. And not a moment too soon – or late. This week looks like it could be one of the busiest for me. With government meetings every night except Friday – so far – cooking won’t be one of those luxuries I’ll be able to enjoy.

Good thing I packed plenty of food storage containers and a cooler. I was sent back home with a container of turkey, one of ham, broccoli casserole, stuffing, and, of course, pumpkin pie.

If I plan my dinners just right, I should be able to make it stretch at least a couple nights.

Sunday, after coming home from the 2 ½-hour journey to Tampa, I made gnocchi in tomato sauce just to break up the Thanksgiving dinner redux.

I have enough left over sauce to make spaghetti and meatballs maybe Wednesday, if time permits.

At any rate, I know that once these Thanksgiving leftovers are gone, I won’t feel the need for a turkey sandwich for quite some time. I just might have to go with roast beef – until Christmas.
