EATS: Government meetings throw dinner for loop – lunch

I’m one who loves to eat breakfast for dinner. There’s something comforting about a plate of scrambled eggs and waffles after a long, crazy day covering breaking news, feature interviews and general deadline stressing.

But when it comes to lunch – I’m a firm believer that sandwiches belong at the noon hour – not dinnertime. Tonight, however, will be an exception – as most every other Wednesday seems to be anymore.

Wednesdays are when the Sebastian City Council holds its regular meetings – and prior to that, there is often a Community Redevelopment Agency meeting. Those meetings, held at 6:30 p.m. and 5 p.m., respectively, are smack dab in the middle of my normal dinnertime!

So what’s a girl to do? Pack a lunch.

To keep my sanity – and stretch the life of my smoked chicken breast from the grocer’s deli – I packed leftover Chicken Rigatoni Caprese and a garden salad for lunch.

You gotta love eating dinner for lunch and lunch for dinner, right?

Oh well. At least I won’t be interrupting council proceedings with a gurgling stomache.

Sigh.
